Use That Pickle Juice!
In my home we go through pickles like we go through water. I am always buying a new jar of pickles when I go to the grocery store. I like many varieties of pickles: dill, sour, sweet and butter too. When I am finished with a jar of pickles I always pour the juice in the sink and of course recycle the jar. I had been wondering lately however, how I could reuse the pickle juice as it seems to be such a waste to just dump it in the sink.
I was chatting with my sister in law Hannah the other day and she mentioned how she loves to eat pickled vegetables. I though, wow, what a great idea. When she finishes a jar of pickles she cuts up vegetables and places them in the jar of pickle juice. She lets them sit for a few days and Viola, pickled veggies. Try using carrots, broccoli, cauliflower, peppers, mushrooms, onions, tomatoes and more! You can also put hard boiled eggs into the pickle juice and you will have pickled eggs!
Have some pickled vegetables on your salad or just eat them raw. Add some chopped pickled eggs to salad, chicken salad or just eat em whole.
Try some of these pickling ideas too:
Add garlic & Mrs. Dash and use as a marinade.
Pickle some pearl onions and use in a stew.
Add some pickle juice to mayonnaise and use for coleslaw and dressings.
